About Dancing Ewe Farm

A story of craft, hospitality, and a deep connection to the land — rooted on the rolling border of New York and Vermont.

The Beginning

Founded in 2003, Dancing Ewe Farm began as a small artisan cheesemaking operation in the rolling countryside on the border of New York and Vermont.

In the early years, we focused on producing traditional rustic cheeses inspired by Tuscany, particularly caciotta and fresh ricotta, using locally sourced cow's milk and old-world techniques rooted in Tuscan and Roman traditions. Years later, we managed a flock of about 120 ewes and began producing Pecorino Toscano.

A Place in Celebrated Kitchens

What started as a humble creamery quickly found its way into some of New York City's most celebrated kitchens, including restaurants associated with chefs such as Mario Batali, Daniel Boulud, Lidia Bastianich, Peter Hoffman, Thomas Keller, and others.

Those early relationships helped shape the identity of Dancing Ewe Farm: simple food, thoughtful hospitality, and a deep appreciation for craftsmanship.

How the Farm Evolved

As the years evolved, so did the farm. What began as a cheesemaking operation gradually expanded into intimate farm-to-table dinners and seasonal gatherings, where guests could experience the beauty of the land firsthand.

Surrounded by open pastures, historic barns, stone walls, and sweeping views of the Vermont mountains to the east and the foothills of the Adirondacks to the west, the farm became a place where food, conversation, and rural life naturally came together.

A HIDDEN DESTINATION

Located far from major cities, yet close enough for a meaningful escape, Dancing Ewe Farm developed a quiet reputation as a hidden destination tucked into one of the most scenic corners of the Northeast.

A New Chapter

Today, Dancing Ewe Farm is entering a new chapter. While the cheesemaking and livestock days are now part of the farm's history, the spirit of the property remains the same: authenticity, tranquility, and connection to the land.

The farm is now focused on private events, curated gatherings, retreats, and unique countryside experiences designed around the natural beauty and peacefulness of the property itself.
